Vincotto PrimitivO presentation
VincottO PrimitivO is a Vincotto Salentino, made of red organic Salento Primitivo IGP wine and cooked grape must, from the same grape variety as the wine (Primitivo IGP). Cooked grape must and wine are slowly reduced to obtain a thick and smooth liquid well balanced in flavours.
It’s a food and condiment rich in nutrients and with a variety of healthy properties: the high content of antioxidants and polyphenols contributes in the activation of the enzymatic functions of the organism; inhibiting toxic compounds and free radicals. Red organic Primitivo IGP grapes are rich in natural polyphenols and flavonoids, which are antioxidants and moreover they have a positive effect on cardiovascular pathologies, on cognitive disorders and neoplastic diseases. Nutrigenomics, the science that studies the interaction between food and nutrients and DNA and genes, sees the VincottO PrimitivO as a key player in the prevention of genes’ pathologies. Doctor Pagliaro, author of the book Recipes for your DNA – how to treat yourself through food (Edited by Giorgio Mondadori), uses the VincottO PrimitivO in several recipes, because of its antioxidants. The antioxidants that are in this product are able to “heal” the traumas suffered from the genes caused by metabolic and food disorders. The composition of this product, rich in nutrients and free from colorants and from added preservatives, gives the product an added value strictly connected to the healthy aspects of food, without leaving the taste aside.
Being the VincottO PrimitivO a condiment and food, it can be used in the preparation of cold and hot dishes, to enrich the flavour and to bring out the natural aroma and taste. It prepares the palate to perceive every single flavour of the food, leaving your mouth fresh. It prepares the taste buds to perceive the flavours of the dishes without covering their natural aroma and flavour.
Two versions of VincottO PrimitivO are produced: Balsamic and Ingentilito, according to the sweet and sour taste and to the usage occasion. The company Terra Apuliae S.c.r.l produces also Cuettu, cooked grape must, great on crêpes and on ice cream, and the Glaze of VincottO Balsamic, perfect to garnish meat and salad dishes.
